<p>掌舵欣圖軒廚房的靈魂人物──行政師傅劉耀輝師傅，擁有超過三十年粵菜經驗，一直鑽研中菜烹調技術，薈萃紮實功架，炮製出令中外饕客亦難以忘懷的味道。最近，劉耀輝師傅與主廚鄭文生首次公開分享入廚多年的烹調技巧，更披露經典美饌「佛跳牆」和「醬爆M9和牛鴨肝黃金盞」的烹調秘技，進而探索欣圖軒創作美食珍饈的靈感來源。</p>

<p>為了還原這道經典名菜<strong>佛跳牆</strong>的真味，兩位師傅特地從源頭搜羅每種珍貴食材。「來自南非的鮑魚、非洲的花膠、澳洲的海參和印尼的燕窩，甚至香菇的類型也是精心挑選的。我們特地挑選了茶花菇。雖然個頭略小，但味道卻很濃郁，因為它們種植在帶有普洱茶園的土地上，所以帶有淡淡的普洱茶香。」</p>
<p>欣圖軒的佛跳牆之所以大受追捧，秘訣在於對師令以及團隊對細節的重視。菜餚內的每一款食材都是單獨慢燉，以鎖定其美味和香氣。單是海參就需浸泡五天；另外，烹飪時間也是關鍵之一，明火燉煮三十分鐘，分秒不差。如此一絲不苟，難怪令此珍饈蘊藏濃郁的鮮味。</p>
<p>欣圖軒另一招牌名菜──<strong>醬爆和牛鴨肝黃金盞</strong>，採用與日本A5和牛有著相近的大理石花紋的澳洲 M9和牛，配以匈牙利的鴨肝快炒而成，入口即化 ，五味俱全。</p>

<p>劉總廚指：「考慮到客人大多喜歡味道濃郁的爆炒牛肉菜式，所以我們特地採購澳洲M9和牛。這種優質牛肉不僅品質極高，而且較為精瘦，同時還蘊含不飽和脂肪酸和氨基酸，與美國和牛相比，其肉味更香濃。日本和牛雖以油花均稱見稱，但下鍋爆炒時會變得太油膩，澳洲 M9 和牛則非常適合煎炒。這道菜配以少量的香煎鴨肝一起爆炒，讓牛肉充滿野味和微甘滋味，達致肉香多汁和豐腴口感的完美平衡。」</p>
<p>兩款經典名菜現已加入兩個全新推出的菜單──<strong>劉師傅精緻珍品晚宴</strong>包括招牌「佛跳牆」，以及主廚推介的香芋蛋白燉鮮奶，底部有輕如空氣的蛋白燉鮮奶，配上綿密口感的芋泥，微溫又美味的組合，每一口都令人心頭暖乎乎的。</p>

【米芝蓮新菜】重現久經失傳「佛跳牆」！今秋必試二星中菜食府

<p>為慶祝《米芝蓮指南香港澳門》推出 11周年，澳門新濠天地將於 12月 11日（星期二）舉行一場別開生面的國際級盛宴。六位來自世界各地米芝蓮二星及三星餐廳的名廚將會聯手為賓客們締造一場無可比擬的餐饗體驗。</p>

<p>除了澳門新濠天地的兩位烹飪巨星，米芝蓮二星法式食府「御膳房」的 Fabrice Vulin和二星粵菜食府「譽瓏軒」的歐陽文彥，還有巴黎三星 Alain Ducasse au Plaza Athénée 的餐飲界巨頭Alain Ducasse（杜卡斯）、紐約米芝蓮三星日式餐廳 Masa的高山雅氏（Masa Takayama）、香港米芝蓮三星龍景軒的陳恩德師傅，以及美國三藩市米芝蓮三星 Manresa的David Kinch。 最後，當然不少得由巴黎殿堂級甜點大師Pierre Hermé 為賓客獨家精心打造的精美法式甜點。</p>

<p>明明公司附近有好多嘢食，但係每日到咗lunch時間都好苦惱，雖然有好多餐廳畀你揀，但硬係每日都好糾結，諗唔食乜？如果你係喺太古附近工作嘅話，恭喜你呀，因為TREATS繼十二月打頭陣的老字號餐廳 「蛇王芬」之後，搵咗榮獲兩屆米芝蓮推介的街頭小吃「Kelly’s Cape Bop」加盟，喺 TREATS開設灣仔本店以外第一間pop up，由今日開始去到5月31日，唔使去灣仔都可以食到健康潮食喇！</p>
<p>未聽過Kelly’s Cape Bop，唔緊要，輕輕介紹吓啦。呢間來自泡菜國嘅米芝蓮食店，主打街頭健康小食，多菜少飯，創辦人Una當年見阿女Kelly食得唔多，仲唔肯食菜，為咗佢嘅健康著想，特登親手整啲韓國家庭郊遊時最愛吃的紫菜飯卷畀阿女，仲減少米飯量及增加蔬菜的種類，希望讓女兒可以一次過吸收多種所需營養。所以如果你諗住食劣食芝士步隊鍋嗰啲嘅話，Sorry，呢度係無架！</p>

限時登陸！Kelly's Cape Bop 韓風健康車胎人美食

<p>米芝蓮一星法國餐廳Seasons by Olivier E.最近首次推出精緻法式周日早午餐，由米芝蓮法籍名廚Olivier Elzer主理並以海鮮為主題，不容錯過的波特蘭緬因 (Maine) 龍蝦、即場新鮮開的法國生蠔，另外還有大蝦及阿拉斯加蟹腳，海鮮迷絕對無可抗拒。沉醉佳餚美食之外，愛好杯中物的更可自選無限供應紅、白餐酒及啤酒，或無限供應Veuve Clicquot Ponsardin香檳。</p>

<p>冷盤當然不乏各式鹹香火腿，芝士則來自聲名顯赫的法國芝士世家Les Freres Marchand，這家芝士精煉廠的芝士產量稀少，品質卻絕對超水準，在Seasons自助餐桌上供應的芝士品種亦會按時提供，確保將最新鮮及優質的滋味送給芝士同好；旁邊的濃郁洋蔥湯，亦備有瑞士芝士及多士。</p>
<p>前菜方面亦予人驚喜，精緻的選擇裡有多款總廚Olivier Elzer的拿手菜式，包括大受歡迎的龍蝦啫喱，底層是清新的鮮牛油果醬及海蝦，中層是晶瑩剔透龍蝦啫喱，由龍蝦濃湯製作而成，鮮味十足，而頂層是加入香料的雞尾酒汁，吃的時候總廚特別提醒 &#8211; 每啖均要結合層層的滋味，否則不能品嘗到這個名物的最佳味道、層次及質感；不可錯過的還有五香烤吞拿魚配脆紅蔥及牛油果醬，廚師特別選用味道濃郁的西班牙吞拿魚腩，以五種秘制香料腌制過後，先輕輕一炙魚肉的外層，內裡更保持嫩滑鮮味的刺身狀態，再切成薄片，加入以牛油果、芫荽、青檸汁、洋蔥碎、炸紅蔥及紫蘇調制成的醬汁，此菜式更是總廚Olivier在法國勃根地 (Burgundy) 當廚師時創作並一鳴驚人的菜式。<img src="https://prd-cdn.jessicahk.com/files/01c_3.jpg" title="慢嚐米芝蓮一星法式早午餐" class="paragraph-image" alt="慢嚐米芝蓮一星法式早午餐"/>除了自助美食外，客人可按自己喜好，自選心水的雞蛋美食及主菜。</p>
<p>既然是早午餐，當然不少得蛋饌。用上法國一級雞蛋，客人可從四款烹調手法中 &#8211; 水煮蛋、炒蛋、太陽蛋及奄列，揀選最喜愛的蛋饌。每款蛋饌均跟有煙肉、蕃茄、大啡菇及薯餅。</p>
<p>自選主菜中，包括法國的經典菜式 &#8211; 油浸鴨腿，鴨腿以慢煮形式浸煮，鴨腿外層酥香，內層嫩滑，香口惹味；銀鱈魚及法邊豆配薯蓉及菠菜、Seasons漢堡、白酒忌廉煮青口、燒西冷配薯蓉、蔬菜及黑椒汁，還有餐廳的招牌菜式 – 黃油雞、百里香配香蒜牛油、薯蓉及蔬菜，香烤春雞一向是法國的重點菜式，選用來自法國沙朗 (Challans) 的黃油農場春雞，骨骼細小的黃油雞不但皮薄，而且肉質幼嫩，滋味比一般雞只豐富。在鋪上香蒜香草牛油後，總廚再將百裡香、迷迭香及龍蒿草葉等放入春雞內，以燒爐以慢火燒制40分鐘，完成後香草的氣息由內至外滲滿整只黃油雞，吃的時候肉質鮮嫩多汁。<br />
在法國餐廳裡，甜品絕對是不可或缺的一環。</p>
<p>由新鮮出爐的檸檬撻、杏仁梨撻、法式小圓餅、法式泡芙、淋上朱古力的可可爆谷、色彩繽紛的鮮果及乳酪等組合而成的甜品，看過去就是一幅賞心的圖畫。</p>

上海覓食指南 最新米芝蓮出爐

<p>巴西籍的星級米芝蓮大師Rafael Gil現已進駐Ritz- Carlton 酒店，成為Ozone Bar 的主廚。由Rafael主理的餐廳，別具Rafael對家居舒適溫馨意念的理解，用餐者如同到了好友家中吃飯般自在輕鬆。</p>
<p>記得不可以錯過疏乎厘雀巢、卡拉賓大蝦餃子配牛肝菌清湯和魚子醬配煙燻帶子及蘆筍。三款菜式都考究了Rafael對中西式食材的特別心得。<br />

朗廷酒店的中菜廳唐閣晉升三星，打破近幾年三星餐廳的悶局，成為第二間擁有三星的粵菜，亦令香港的米芝蓮三星餐廳增至6間。唐閣食物固然出色，最近餐廳更配合酒店推動環保的宗旨，特別與設計師合作換上環保減廢制服，同時推出綠色素食菜單，於星期一及五的午市供應，賣相繽紛又健康美味！</p>

今年可謂中菜在《米芝蓮指南》的出頭天，二星以上的新晉餐廳全為粵菜！富臨飯店和明閣均由一星升為二星，上年的二星亦保持一貫水準，合共有14間餐廳。搬到信和廣場的富臨飯店仍然保持一貫水準，而朗豪酒店內的明閣食物水準一向高，裝潢分成古風的明日和摩登的明月兩部份，可根據不同場合善用。</p>
<p>新一星：百花齊放<br />
今年共有11間餐廳新獲選為一星餐廳，香港區的6間包括法國菜的ON、四川菜的呇、現代法菜Serge et le Phoque、創意日菜Ta Vie、觀塘利苑酒家及中環北京樓。<br />
最啱特別日子前往的是兩間法國餐廳，2013年開業的Serge et le Phoque，擺脫法國菜傳統框框，以sharing size上菜並提供廚師發辦的chef menu。同樣是法國菜的ON混合地中海風味，更可到芝士房自選芝士。<br />
