<p>曾幾何時，喝茶似乎是一件很老套的事情。在我們的印象中，仿佛是老一輩才會坐下慢慢細心品茶。急促的生活節奏，壓迫的城市生活，實在讓人透不過氣。90後的茶藝師Catherine深明這個道理，身體力行開設茶館，讓年輕一代認識茶藝背後的意義。</p>
<p>
冥冥中與茶結緣<br />

有人喜歡喝咖啡，有人喜歡品名酒，但是年紀輕輕的Catherine卻獨愛茗茶。雖然同樣是發掘味覺藝術的體驗，但是後者卻很容易被時代遺忘。Catherine在小時候已經常常跟媽媽上茶山，對於茶,她也有一份執著及見解：「因為以前見識得多，自己慢慢地也會多留意不同茶葉的種類。它們的味道、性質、採摘方式、後期做法等，都是我會留心和學習的地方。」<br />

久而久之，品茶成為了Catherine生活的一種習慣。與其說是習慣，倒不如說是她生活中不可缺少的一部分。「有時候去日本，去台灣，我很自然地會去當地不同的茶館喝茶。茶藝遍佈全球，不同的地方，也有他們的茶道藝術。」Catherine更開玩笑說，有些人會因為「瞭解而分開」，她與茶，卻是因為瞭解後變得不可分割。</p>

創業的信念<br />

小妮子初出茅蘆，開店創業，的確是不容易的事。但是基於對茶藝的喜愛和熱誠，使她怎麼吃力也能夠堅持下去。創業初期，Catherine直言最困難的是心理關口：「上年7、8月籌備大小事務是最辛苦的，我甚至沒有時間見朋友，更被家人投訴我沒有時間陪他們吃飯。我比較情緒化，有一段日子我甚至不想見任何人，只想埋頭工作。幸好經過靜心思考後，最終也能找到方法舒緩壓力。」<br />
&nbsp;<br />
雖然創業面對重重挑戰，但是Catherine做任何事都要親力親為，絕對不會假手於人。茶舍內的桌椅、茶具等，都是由Catherine購買回來及一手一腳組裝的。她只有一個信念，就是讓前來茶舍的客人都能夠在石屎森林裡找到一片綠洲，過上一個愉快悠閒的下午。<br />

對茶的執著<br />

開了茶舍，對茶的執著也會更深。每當說起茶，Catherine總是頭頭是道，除了因為她對茶有所認識之外，最大的原因是她視茶為一種態度和藝術。「不尊重茶葉，我們沖出來的茶也不會好喝，對待茶道應該要從心出發。若果你覺得茶只是一種普通的飲品，那麼我面前的這杯茶跟任何茶樓的茶也沒有分別。喝一口茶用心去品味，才會品嘗到茶香。」Catherine語重心長地解釋道。<br />

曾經有訪問問及Catherine，失戀的人，需要喝什麼茶？她很有趣味地回答：「我會建議他們喝一杯清水。喝清水除了能讓人清醒，在品茶方面，也有很大的幫助。當我們連不同的水都能分得清其味道時，對於茶的味道，我們也能瞭解得更加透徹。」不知道為何的，Catherine這番話,讓我想起了王家衛的電影，有一種哀愁，也有一份透徹感。原來茶和水的關係，也是這麼的曖昧。</p>

<p>品茶是一種態度<br />

對於茶，人們往往有種舊有的誤解，以為喝茶一定要上茶樓，以為喝茶一定是吃點心。在Catherine的眼中，喝茶品茶，絕非只是配點心，由選茶到沏茶，每個工序都是學問。「在家裡沏茶，你可以放慢腳步，例如你不可以太快或太急，這樣你會容易打破茶具，甚至燙傷手。學習沏茶讓我漸漸改掉性急的壞習慣，現在我也習慣能夠凡事都慢下來。」Catherine坦言，茶藝讓她學懂的，比想像中更多。<br />

要讓習慣生活節奏急促的年輕人學會停下來去欣賞茶道，這並非一朝一夕的事。除了要對品茶有興趣外，更要讓他們明白茶與水的關係，這是從「水」升級的一種藝術。對於Catherine來說，茶不只是一種飲品，而是一種藝術。改變喝茶的習慣，甚至能夠你有新的生活體會。<br />

喝茶並非土炮事<br />

眾所周知，品茶風氣在本地並不盛行，對此，Catherine也有一番體會：「其實現在不少外國地區，喝茶的風氣變得盛行。在本地，便利店也開始有不少支裝茶飲品供人選擇，人們也開始選擇喝茶。既然如此，為何我們不能做得更多？好好地推廣這種文化，讓我們這一代人多認識品茶是怎樣的一回事。」<br />

為了推廣品茶文化，Catherine除了自己開茶館泡茶外，她更定期開設不同的workshop教沏茶，以及與不同的機構或文化團體合作，讓茶藝融入生活和文化。Catherine表示，有時有些前來喝茶的客人若果對茶藝有興趣，她當然不介意與他們分享及交流，以身傳道，令茶道文化讓更多人認識。</p>

將茶藝融入生活<br />

Catherine最期望的，是希望茶藝文化能在香港更加普及化。她表示，雖然現時社會甚至是政府對於茶藝發展給予的鼓勵及支援仍然不多，但是讓她感到欣慰的是，現時已經有不少相關的文化活動是在活化茶藝，例如在PMQ也有相關的展覽和宣傳，使茶道與生活，甚至是與藝術結合。<br />
&nbsp;<br />
「我不奢望外界會給予我們什麼龐大的支援，但是我相信，要讓這種文化普及，首先要讓人們認識茶藝，就像有心人也會前來茶舍學習茶道，這是讓我感到很高興的。」傳統的茶藝從來都是一種遙遠流長的文化結晶，我們這一代要做的，不是去發掘新興的事物去埋沒它，而是要將它發揚光大，讓這種藝術得以保留。</p>
